Make Cooking and Cleanup Easy with One-Pot Meals

While preparing meals during this time of quarantine can certainly be an effort (not to mention cleaning up afterward!), you can take some of the pressure out of the constant meal preparations by turning to one-pot-wonders that can be made in large quantities and will help make preparation and cleanup a breeze.

Here’s a one-pot chile dish that’s super satisfying and a cinch to make with canned tomatoes and beans:

  • Super Easy One Pot Chili—All you need for this fabulous chili is a pound of ground beef (or plant-based substitute), two 28 ounce cans of diced tomatoes, one 14 ounce can of tomato sauce, four 15 ounce cans of black and/or red kidney beans, a large yellow onion, 4 cloves of garlic, and one teaspoon each of chili powder and cumin. Add salt and pepper to taste. That’s all there is to it! Just chop up the onions and garlic and sauté with the spices and ground beef until lightly browned. Stir in the tomatoes and beans. Let simmer for about a half-hour and serve with dollops of sour cream and grated cheddar cheese. Delicious!
